When does delicious become risky?
Many of the traditional dishes we love — kavarma, gyuvetch, moussaka, or stewed meat — often contain more salt, fat, and sugar than our bodies can safely process. High salt intake leads to fluid retention, increased blood pressure, and, in the long term, kidney damage.
The World Health Organization and the Ministry of Health recommend no more than 5 grams of salt per day (about one teaspoon), but the average Bulgarian consumes over 10 grams daily.

According to nutritionists, the following cooking methods are more stressful for the kidneys:

  • Frying – creates harmful substances, especially when the fat is reused.
  • Steaming – healthy, but often accompanied by a lot of salt, soy sauce, or spices.
  • Baking – a good solution if no fat is added and the food is not overcooked.
  • Boiling – the gentlest method, which preserves nutrients and does not strain the kidneys.

But... how to cook healthier

  • Use less salt and fat — season with herbs, garlic, lemon, or olive oil.
  • Avoid ready-made sauces and broths — they contain a lot of sodium and sugar.
  • Cook more vegetable dishes and include legumes.
  • Drink enough water throughout the day to support kidney function.
  • If you have high blood pressure, diabetes, or kidney problems — consult a doctor or dietitian.
